Ali-San Oolong

Ali-San - This Taiwanese oolong consists
of large rolled leaves that have a purple-green
appearance when dry. It is grown in Chaiyi
County in Taiwan. The elevation ranges from
3000 to 4500 feet. There is a short period
of the day with full sun and this produces
a sweeter and less astringent brew. It has
a sweetness similar to a Baozhong tea but
is tightly rolled like other Formosa oolongs.
This tea is high in theanine, one of the
active components that gives tea its many
health benefits. It produces a golden yellow
liquid which has a unique fruity aroma.
This tea can be infused many times with
good flavor. Use water at 180-190 degrees
for two to three minutes to help wake up
these special leaves.

Formosa Tieguanyin - Full fermentation and
complete roasting create this tea’s
smooth and satisfying flavor. Repeatedly
rolled into their tight shape, these leaves
open to reveal Tieguanyin’s classic,
dark green, shiny leaves. This tea is darker
and richer than its mainland China cousins.
It produces a brew that is deep orange to
red in color. It has a light, fruity aftertaste
that is only slightly astringent. Good for
digestion and great after meals for its
full bodied character. Grown in Nantou County
in Central Taiwan, this tea takes water
up to 190 degrees and can be infused three

This fine grade of dark Tieguanyin is a
favorite of many. Roasted to the peak of
flavor, this tea exhibits a smooth and silky
flavor with a deep brown infusion. The Tieguanyin
leaves are somewhat thicker than their green
oolong cousin. This in part contributes
to this teas uniqueness. Some call this
flavor woody. This tea is tightly rolled

Mountain, Hsin-Chu, Taiwan at 800-900M.
It is a special production tea which is
quite limited. This white haired tea is
60% oxidized which delivers its honey like
flavor. Queen Elizabeth II called this tea
an ‘Oriental Beauty’ when she
first tasted it. It takes 3000-4000 buds
to make one pound of tea. This tea is quite
mysterious. It tastes like many different
teas combined. Sometimes it seems like an
oolong bordering on a black tea. Other times

(Osmanthus) Oolong is quite green and dried
with orange blossoms (osmanthus fragrens)
flowers. These tiny yellow flowers add a

Brew like other green oolongs with 175-185

This is a great representative dark oolong
from Taiwan. It is grown on Salisam Mountain
at 1400M. Salisam is located in Tungpu,
which is a village on Jade Mountain (Yushan).
There are also hot springs in this area
of Taiwan. Can be steeped three or four
times with full flavor. Use 180 deg water
or hotter for deepest flavors. A great and
special gongfu tea. Grown pesticide-free.

Spring Green Oolong Tea

First these leaves are wilted in direct
sunlight. After they are turned in big bamboo
baskets to bruise the edges of the leaves.
This is a classic production for good oolong
tea. It makes the leaves sweet and fruity,
which are hallmarks of the teas of Taiwan.
These fine Taiwanese oolongs are usually
brewed gongfu style and highly concentrated.
Because many leaves are used for each serving
and the high quality of the leaf, these
teas can be re-steeped 4-6 times and still
get good flavor. We suggest to use a guywan
or teapot no bigger than 6 oz. to brew these
teas. Use just boiled water at about 185
deg F. for full extraction. They do also
make amazing iced tea which your friends
will not quickly forget.

Reminiscent of fresh fruit and bamboo, these
thicker leaves create a mellow and creamy

Pinlin Baozhong
Generation Tea Loose Leaf Taiwan Oolong

Baozhong tea is a very lightly oxidized
(fermented) tea that is a close cousin of
traditional Oolong tea. Our Baozhong hails
from Taiwan and brews a light celadon cup
that is flowery and sweet. Little oxidation
makes it also related to Green tea, which
is not oxidized. This careful process preserves
the antioxidants, so Baozhong tea is also
good for it’s health benefits. This
is a Spring crop of the rare and well know
Baozhong tea from Taiwan. It is very light
and sweet, perfect for a new tea drinker.
Seasoned tea drinkers will see that you
can use quite a handful of these beauties
in order to create that dreamy cup. A favorite
which is high in antioxidants. Use water
at 165-180 deg F. for the best results.
Don't over steep this tea, it can bitter
like a green if left to long. Rather you
should use more leaves.
