Tang Dynasty, is one of the premier representatives
of Chinese green teas, grown near the famed
West Lake area on the Tieh Mu Mountain Range.
This region of many lakes was said to once
be home to several large, beautiful dragons.
Dragonwell (known as Lungching, Longjing
or Long Gin) is hand-fired in large woks
leaving the leaves flat, shiny, and a yellow
jade color. This is a high grade Dragonwell
tea, clear, yellow-green infusion with an
aromatic earthy flavor reminiscent of roasted
chestnuts.

Black Needle Yunnan Green Tea

Watch out, they don't call them needles
for nothing. They are quite sharp little
swords when dry. This is not a typical Yunnan
tea, as the taste is very light and forgiving
if you happen to forget about the brewing
time. A usual steep should be 1.5 to 2.5
minutes with water about 160 deg. F. Use
two or three times, but with most green
teas, most of the flavor is extracted in
two steeps. The kids love to see the leaves
change color, and the kid in you will also

Organic Baihao Maofeng Green Tea

This Maofeng variety hails from Hunan Province
and consists of smaller leaves that infuse
quickly. Use lower temperature water with
this tea (about 150-160 degrees) to bring
out its lightness without letting it become
bitter. Try using more leaves and brewing
gongfu style to create a healthy cup of
condensed tea. If brewing gongfu style,
only infuse for about one minute and the
complexity will reveal itself. Steep two
times to extract all the nutrients, can
